Mango Salsa Shrimp Tacos


Today I'm sharing one of my favorite meals. Mango Salsa Shrimp Tacos are perfect for those hot summer nights, bonus, it's fast and simple, which means more time for summer fun.

Mango Salsa
1-2 cups organic mango, cubed (frozen or fresh)
Juice of 1-2 organic limes
1 cup chopped organic cilantro
2 chopped medium organic tomatoes
½ chopped medium onion
1 chopped organic green onion
1 minced jalapeƱo 
1/2 tsp fajita seasoning
Once everything is chopped and squeezed mix well in a large bowl.  Mango Salsa is ready, store in the fridge, or set to the side—now time to make the shrimp.
Shrimp
1lb fresh shrimp
4 Tbs lime juice
1-2 Tbs fajita seasoning
½ tsp kosher salt
1 tsp chili powder
Olive Oil or Sunflower oil
In a heated grill pan, with a little bit of oil add your shrimp.  Season with fajita seasoning, salt, and chili powder—and squeeze lime over the shrimp.  Once the shrimp has cooked for about 3-4 min. they are ready.  Make sure not to overcrowd the pan*
Taco Time
Now warm up your flour tortillas and place shrimp and salsa inside–enjoy!
Or if you're going Paleo like me, ditch the tortillas and use bib lettuce for your taco shell or stick the mix in an avocado shell, chunking up the avocado and mixing together with shrimp and mango salsa :)
